I love them, but they never come out right. Eggplants, as my friend Nati says, are perfidious vegetables. Does anybody have the secret knowledge of how to tame eggplants?


Yes. You have to cut them into halves or slices, put raw salt on them and let them "sweat" for half an hour or an hour. Then rince them well. This takes the bitterness out.


A very easy way to fix eggplant is the following:
Preheat oven to 350 degrees.  Spray a large flat pan with Pam. Slice the eggplant about 1/2 inch thick.  Dip each slice into beaten egg, then into breadcrumbs.  Place in one layer on the pan.  Spray the top side of the eggplant with Pam (or other oil spray).  Bake 15 minutes.  Turn.  Bake 15 minutes more, or until lightly browned and tender.


Another suggestion.
Cut into slices of about ¾ cm, flower them lightly, then fry in olive oil or canola oil or mixed. After frying for about 2 minutes each side, soak it on paper (so it won't be too oily), put salt, black pepper, some balsamic vinegar, and rice vinegar or lemon juice. That’s it.
